Bean Me Up!

Bean me up! Eating beans regulates blood sugar, keeps our heart healthy, provides vitamins and minerals, and even helps us lose weight. 

Recipe: My super easy and yummy green beans recipe has just a few ingredients: beans, avocado oil, garlic, slivered almonds and sea salt. Green beans and legumes are easy to buy or grow in many areas of the country and around the world. Mine are from a favorite grower at the KCC farmers market here in Honolulu. First step: sauté the garlic slices in avocado oil, removing them when they are a golden light brown. Second step: sauté the beans in the garlic-infused oil until soft but still crunchy. Third: sprinkle with the garlic chips, a few slivered almonds and sea salt to taste. Just 15 minutes for a delicious and healthy meal.

Nutrients: Packed with nutrients, common beans (Phaseolus vulgarisms) are a super addition to your menu. Common beans include the yummy green beans as well as legumes such as pinto beans, kidney beans, and black beans. Their nutrients include protein, fiber and complex carbohydrates. Beans are rich in vitamin A, vitamin C, thiamine (B1), riboflavin (B2) and folic acid (B9) as well as the minerals calcium, iron, magnesium, manganese, phosphorus, and potassium.

Benefits: With all these nutrients, beans have healing effects on our bodies. Studies show that beans and legumes can help with weight reduction by improving our bodies’ control of our blood sugar. They decrease the risk of heart disease by reducing serum cholesterol and normalizing blood pressure. The phytochemicals in beans also provide anti inflammatory and anti-cancer effects. To improve your heart and digestive health, lose weight or just enjoy a great tasting meal, add a few of tablespoons of cooked beans to your daily diet.
